Scallop Crudo

Ingredients
Sashimi Grade Scallops (5)
1 avocado sliced thin
1 naval orange sliced thin
1 teaspoon Truffle Oil
1 teaspoon Soy Sauce
1 teaspoon ponzu sauce
1 tablespoon fresh squeezed lemon juice
1 tablespoon fresh squeezed orange juice
1 tablespoon fresh squeezed lime juice
flaky sea salt
Micro greens for garnish
Directions
Prep your scallops by placing them in ice cold water with salt.
While your scallops are soaking, slice your oranges and avocado thinly.
Take your scallops and slice thin.
Plate your scallops, oranges and avocados one after the other.
Prepare your sauce by mixing the above measurements of soy sauce, ponzu sauce, truffle oil and all of the fresh squeezed citrus juices.
Finally add micro greens as a garnish
Add a pinch of japanese chili flake powder and flaky sea salt
